THE SOURCE

We spend about half of the year visiting farms around the world.
It’s all about building trust with growers.

The beans at Maruyama Coffee are carefully selected and directly procured by our president, Kentaro Maruyama. Kentaro visits farms across the globe to build solid relationships with growers and to secure supplies of premium-grade beans.
It’s not just about the coffee; for Maruyama, good bonds go deeper. Often, he'll talk with growers about family issues or the matters they’re dealing with in everyday life. This communication is the first building block for so much more: caring for the grower’s living standards and motivating them to keep producing high-quality coffee. Maruyama spends about half the year on the go, forging trusting relationships with growers far and wide to develop reliable sources of extraordinary beans.

THE ROAST

Make every bean special
– our unique roasting techniques convey the authentic flavor of the beans.

After procuring a batch of raw coffee beans directly from the origins, the next step is the roast—and our proprietary roasting techniques get the most out of what makes the beans unique. We heat the raw beans at around 200°C, which darkens the surface and initiates a chemical change inside. Through that roasting process, the beans’ distinct aromas and flavors start to shine through. The Roasters focus on tailoring the process to the individual bean, always concentrating on finding the optimal balance between the acidity and aroma profiles. The same beans can come out tasting completely different depending on how the roaster approaches this process. The decision on which of the coffees’ characteristics to enhance is entirely up to the roaster’s skill. We’ve installed the Loring Smart Roaster at our roasting facilities; a cutting-edge roasting machine capable of maintaining these characteristics and excellently recreating each coffee's flavor. For us, leveraging this technology to showcase the unique characteristics of beans and capture their innate flavors is key to the roasting process—a vital step.

Specialty coffee beans purchased directly from growers become products after roasting.
Every single bag of our coffees is packed with care at our factories located in Karuizawa and Komoro in Nagano Prefecture and are delivered to our stores and into the hands of our customers.
Coffee comes first in everything we do throughout the process from roasting to packing, and we are very selective of our packaging materials as well, all for the sake of protecting the flavor of freshly made coffee.
Our offering is not limited to coffee beans; every day, we are developing sweets and coffee concentrates made with our coffees, as well as original items and other products.
In principle, our product development is driven by customers’ requests for the items they wish were available.
